Description
This Mexican Longaniza sausage is made from fresh, trimmed pork shoulders (picnics) and a traditional dry spice blend, unlike low-quality, industry-standard chorizos that often contain questionable raw materials.
Our own unique Longaniza sausage recipe incorporates the mild sweetness of masa (corn) with a spicy kick on the finish. It is similar in many ways to “Al Pastor” recipes, but ground into a sausage.
While it tastes best all by itself, this Longaniza goes well with pineapple salsa, and it makes an excellent substitute for Chorizo as an ingredient in Mexican cuisine (tacos, tostadas, quesadillas, burritos) as well as in a wide variety of soups, omelets & scrambles, and more. It is also amazing cooked on a smoker.
If you like your sausage extra crispy, remove it from the casing and fry it directly in a pan or on a flat top. It’s designed to be cooked at a high temperature without burning, and it’s even better when cooked in patties.
Each 5lb. order is one long rope, that is approximately twenty 4oz portions (4oz is approximately 5 inches).
These sausages are uncooked and must be cooked thoroughly to a minimum internal temperature of 160 deg. F prior to consumption.
