Unlike our Mild Italian sausage recipes, our Luganega sausage is stuffed in a natural sheep casing for those who prefer this traditional Italian style. Our signature medium-coarse grind and our traditional, old-world Italian spice blend goes into making this mild Italian Sausage that is made with less fennel seeds. This is a favorite of Italian traditionalists and is wonderful served on the center of the plate in pinwheels, in sandwiches, pastas, risottos, and used the same way as any other Italian sausage.
Each 5lb. order is generally 1 long rope.

This sausage is uncooked and must be cooked thoroughly to a minimum internal temperature of 160 deg. F prior to consumption.
